How can my employee and i create a social security number?

Hello i just arrived to Paris i am an Italian citizen and i had a job offered in a french company. They are asking me to create the social security number in order to create me the permanent contract, but i cannot create my social number without the contract. How can i help my employer and is it enought to present a job offer signed by the CEO with my papers?

First of all, you have to know that it is legal to work in France without a social security number. You can read this topic about getting a job in France without a social security number.
