New to France, stay at home parent

Hello. I am from the UK and newly resident in France since mid-November. I run a company in the UK but I am not working in France, I am a full time parent to our child. My wife who is Danish is in full time salaried work. I can't apply for a Carte de Sejour as I believe I am supposed to apply for health insurance first, but I am unable to apply for health insurance as I do not have a social security number and since I'm not working here I don't think I'll get one. It seems too late too apply for an S1 from the UK if that is even relevant anymore. So we're quite confused about how to get both the carte vitale and a carte de sejour.

If you are a european citizen, living here in France less than 5 years and you could not get a S1 form, you will have to provide a proof of all your incomes from past year and a refusal letter of a S1 from your previous health system.

Hello. Yes that's correct, she is on a full time contract with a French company. I've been told that I will be "covered" by the health insurance provided through her work but no-one has told her what this cover actually means, and if I need to apply for it separately. I've also this can take 3 months which would take me past the end of the transition period. I also don't know if this cover will be adequate to fulfil the requirement of my path to getting a Carte de Sejour, which I believe requires me to have my own comprehensive health insurance.
